How would I boot from one hard drive, but run everything else off of the other?

I currently have an HP stock computer with a 250GB SATA Hard Drive in it. It includes the recovery partition from HP. I am getting a new computer soon. What I want to do is keep my current hard drive and get another 500GB hard drive. I want to boot windows from my old one with the partition from HP on it, and use the new 500GB one for all of my games, programs, etc. It is going to be a gaming rig so i want optimum speed :) How would I set up both hard drives to where it boots from the 250GB and runs windows from it, but runs programs and anything else I install off of the 500GB?
